I like to take some deer meat and mix it in with queso. Not much of a recipe but it is good.

Steaks, roasts, tenderloins, backstraps on the grill are excellent. Just make sure you don't overcook or you get leather.

I like wrapping a chunk of backstrap in bacon and grill over medium heat until the bacon is crispy brown. Will typically result in a medium rare chunk of meat that's delicious. We also simply blacken, or cajun, spice a backstrap or steaks and grill.

We mix venison burger with spicy pork sausage for spaghetti, chili, burgers, etc. Excellent.

Ground venison made into meatballs stuffed with cheese! I brown the meat in a cast iron with a lil olive oil. Then put it in the oven and cook the meat through. Served on top of some spaghetti!

Can't go wrong with backstrap on the grill with some McCormick "Montreal Steak Seasoning".

Last season when I was butterflying and vacuum sealing the loins I sprinkled some seasoning on the meat before I sealed it up. That works great, because while you thaw out the meat it kind of marinades itself.

If you are not using Everglades wild game seasoning on your grilled venison your are wrong:aano:. Oh and I love a roast in the crock pot with cream of mushroom soup, lipton onion soup mix, tony cacheres, half a white onion and Worcestershire. 10-12 hours and put it on some mashed potatoes :o.

Just found this recipe for deer pinwheels on the Game & Parks YouTube channel. Cooked some up on the grill this weekend and they didn't last long.

Deer fajitas were a staple in my house growing up. We ate almost no beef growing up, everything was made with deer rather than ground beef. Tacos, spaghetti, chili, deer burgers, meatloaf, etc.

One of my favorites is deer pastrami that my dad makes. It's a week long cure (basically just salt, pepper, and pickling spice) in the fridge, stirring daily, then smoked and sliced thin. AMAZING.

This is duck and sausage gumbo, but you can replace the duck with deer!!! Trust me deer and sausage gumbo is to die for. My family is from New Orleans so I know good gumbo. I can't give you my Uncle's recipe; he'd kill me. This one is good. Let me know if you try it!! Good luck!

                              1 backstrap
(Fresh herbs are based on individual taste use your own judgement)
                              Fresh Basil
                              Thyme
                              Oregano
                              4-6 Fresh garlic cloves minced
                              Sea/Kosher salt-to taste
                              Coarse Black pepper-to taste

                              32 oz beef broth
                              32 oz water
                              3 tbls beef base

Boil beef broth, water and beef base, set aside and let cool completely.

Soak trimmed backstrap in cooled broth mixture 3-4 hours but best overnight.

Combine Minced Fresh herbs, garlic, salt and pepper together.

Drain and pat dry backstrap then roll roast in herbs/seasoning blend.

Oven roast and/or smoke the roast to desired doneness and Voila! Best venison prime rib ever!
