    Ground Venison Jerky

    I have two recipes for ground 100% venison jerky. Very good.

    Hawaiian Jerky,

    1 lb 100% ground venison
    1 tsp salt
    1 tbsp brown sugar
    1/4 tsp pepper
    1/8 tsp cayenne pepper
    1 crushed garlic clove
    1/4 c pineapple juice
    1/4 c soy sauce
    tsp of cure

    Jim Bean Jerky
    1 lb venison
    ¼ cup Jim Beam
    2 tsp liquid smoke, hickory
    ¼ tsp cure
    2 tsp maple surup
    1/4 c brown sugar
    1 tsp cracked black pepper
    2 tbsp soy sauce
    2 tbsp worcestershire sauce

    And then what? Do you do it on an oven, smoker, dehydrator? Just wondering.

      I use a dehydrator. It’s pretty good.
