    Hard Tac

    Just wondering if anyone has a good recepie for hard tac. I would like to make some out of venison but the gentleman that used to make it for me is no longer living and I never asked exactly how he made it. Thanks

    I think you’re looking for a recipe for pemmican. Hardtack is a cracker. Google pemmican and you’ll be able to find a large number of recipes.

      Hard tac sausage is an old German recipe. Basically it is dried sausage. You can Google the recipes.

        Yes!!!!!....There is a place by Concordia MO...I think Alma...that makes those dried up logs...FANTASTIC......loved that stuff when I went to visit the Grandparents .

          I've heard dried sausage called spitzmer before. There is a place near Sioux Falls, called Renner that makes it. My buddy's uncle makes it prior to hunting trips to West River, and God help weak-willed that enters a pickup with several guys feeding on that stuff. It is delicious, but definitely make sure you are hunting in to the wind.

                Cooked it once as a mystery meat at my annual Game Feed. I made it like corned beef. Wasn't bad. Wasn't great. They are fatty though and a couple of glands need to be removed from the legs, too.
