Default I need a duck recipe

My son and his buddies shot up the ducks this weekend so how do you waterfowlers cook these things?

a fav way that most everyone will like is to breast them out.

Marinade

wrap in bacon with some pepperjack and jalapenos and grill until its medium rare. Any more and it will dries out fast.

MMMMMMMMMM

With geese I do the same but also make lots of sticks out of them.

I had some teal for breakfast this morning. Last night after thoroughly washing and soaking for a day, I patted the breasts dry, drizzled in olive oil and sprinkled on some salt, pepper, and garlic salt. Wrapped it up in a plastic baggy and let it marinate all night in the fridge working the meat every once in a while to make sure all is coated. Next morning I soaked some skewers in water, wrapped the breasts in bacon and poked the skewers through. Cooked on the grill, low temperature (so the bacon don't burn up) until medium. I just cut one open and saw it was still a bit pink in the middle but not too much. Ate 'em up quick. Good stuff. Best I've ever had.

Here's my favorite way.
Make sure there nice and clean dry them off with a paper towel, then stuff them with sour kraut and rub the breasts with crisco. Place in a roasting pan with a couple cans of chicken or beef broth bake covered at about 375 for about 3 hours then uncover and let the skin get golden brown and crisp (takes about 20-30 min more). Absolutely heavenly! Enjoy!
