As I was driving back from the marsh yesterday, seriously craving a Philly sandwich, and pondering new ways to eat the ducks the crew and I shot, I had an epiphany. Why not make a duck philly?
1 medium onion 1 green bell pepper 1 clove garlic duck breast olive oil salt/pepper to taste hoagie buns Heat enough olive oil to coat the pan on medium. Slice pepper, onion and garlic. Cook until onion translucent. Add duck, salt, pepper to pan and cook about 5-7 minutes more. Toast buns in the oven for 3-5 minutes at 350, lay on some cheese and enjoy. Turned out pretty good, I must say, and for all you bacon lovers, a couple strips of bacon in there would be pretty good too I'd imagine. ![]() |
