Default Frying waterfowl

95% of my fowl gets cooked in the frying pan, just quicker and easier than other ways. I can eat this stuff every night, and pretty much do until I totally run out...

Needed:

Motreal steak seasoning and Italian season(can get both on the spice rack)
meat tenerizer(for Canadas)
Bacon
canned mushrooms

Cut the package of bacon in 3rds, freeze the other 2 3rds for future meals.
Cut duck or goose breasts into thin strips...they cook faster and you get most of the shot out of the meat this way.

Put your goose/duck in the pan, a can of mushrooms, then season with the montreal steak seasoning or italian season or both. Lay the bacon over top, cover as much of the duck/goose as possible, then cover. Put on med/high heat for about 10 minutes, stir it once at around 8 minutes, and its done.

Goes great with garlic mashed taters.

Everything tastes better with BACON!!! I cook up a lot of my game like this too. I usually add in a frozen pack of stir fry vegies too. serve with rice, noodles, taters, or just a side of cold beer and it is finger lickin good!!!

Default Apple cider duck

I am from the old school of hunters. I pluck most of my ducks. Put them in a bag with garlic powder,salt and pepper for 1 to 5 days. Then I take them out and put them in a cooking bag, salt and pepper on top. Pour 2 to 4 cups of apple cider in the bag and close it. Bake 3 to 4 hours at 300% They are tinder and sweet. Your whole family will eat them.

Quickly grilled to med. rare. Just like steak. Various seasonings and marinade.

Crockpot: Dice the meat in small cubes w/ onions or garlic, coconut milk, butter and seasoning of choice then cook all day. Serve over steamed white rice and steamed broccoli spears for supper.

Crock pot birds can be good but I got burned out on them when I was a kid cause thats the only way my dad knew how to cook.

Plucked birds are great, but you cant cook em quick.

With frying, the family can be eating in 20 minutes, this includes the cleaning time. There isnt no way in hades I could crock or bake enough plucked birds through the season to keep me below the possesion limit. I dont have 1-2 hours to cook after I get done for the day, I want to eat NOW, so I can get some sleep for the next day.

gooseh8r, thanks for the recipe! I tried it last night and it was awesome...I will be cooking a lot of my ducks this way from now on. I did add some sliced onions for an extra treat and next time probably some peppers too.

Bacon is a key ingredient and the recipes here are all good. People that don't like to eat waterfowl just don't know how to cook. Now if I can just avoid biting into a steel shot like I did recently. That sucked.

Ya, the steel shot is not as chewy as the lead shot when you bite into it.

My wife cooked some duck Josh's way for Brandon while I was out of town for work. He said it was good.

Its just so damn easy to try new things when you are cooking in the frying pan.

I tried this the other night, was different, but liked it...and it dont involve bacon.

Slice the breasts in thin strips

Now put alittle olive oil in the pan, add your duck strips, a bag of frozen veggies, and alittle bit of the ever present montreal steak and italian seasons.

When your veggies/duck is about done add acouple spoonsful of cream cheese. Shut the heat of the stove and stir until the cream cheese covers everything evenly.

Its not as good as the above way but it wasnt bad, plus the kids actually ate thier veggies for once. I think alittle horseradish would really make it good but my wife cant stand horseradish.

BWHAHAHA. Speaking of Horseradish.We were at a wedding shower for my wife's cousin and they served cold sandwiches with all the regular sides to go along. My wife thought the white stuff was mayo and coated her sandwich really well. She looked at me and said "this stuff is spicy." "Horseradish usually is" was my response.
