Default mmmmmmmmm Smoked Ribs and Pork Loin

Doing 6 racks of ribs, 2 pork loins, and about 15 brats on the smoker today.

Most the meat is from my wild hogs I shot.

I trimmed all the ribs down to spare ribs and put a good rub on them yesterday and wrapped in plastic until today.

Got the hickory rolling about 11 this morning and got the temp stable at 225 and got it all in there. mmmmmmmmmmmmmm

Cant wait! This stuff is making me go nuts cooking it.

Im doing the 3 2 1 method of smoking ribs

3 hours on the smoker

2 hours wrapped

about another hour unwrapped to help firm them up.

Spritzing with apple juice every hour.

Sounds great...can't wait to get my smoker and start doing my own. Do you find the 3-2-1 method the best?

BTW--where did you shoot your wild hogs?

I havent done a lot of ribs but this 3 2 1 method really works great. They came out perfect. They arent all falling apart and sloppy. They actually have the consitency of what ribs should have.

I shot these hogs in Oklahoma this past Nov. Gotta admit that the ribs from them were lacking in meat for sure. The baby backs I picked up at the local butcher were perfect. The loins from my wild hogs were damn good though.

I wished there was leftovers.

on my cell phone. HAHA. Last night I smoked some pork butt for 16 hours that is perrrrrrrrrrfect. Bringing it to the family reunion this weekend. Cant wait to tell them I shot that pig with my bow and your eating it. That will gross out the in laws for sure.
