I need some opinions. The Mrs. "gave me permission" to get myself a one man pontoon for my birthday. The one I like is the Tahoe fisher from Cabela's. Does anyone have any experience with this pontoon or have an opinion about it?

Go for a 2 man. Just because they are more stable and can handle a little wind.

Avoid hard pontoons if you're talking about a kickboat. I have a couple of boats from Outcast, and that's the only one I'd buy. I have the pac9000, pac900FS, and the pac12. Weight, ease of transport, and durability of the inflatables far surpasses that of the "hard" boats.
If you're stuck on a hard boat, get a kayak. Actually, unless you're fishing moving water, I'd consider a yak. They track better, and can be excellent stillwater and moving water, craft if they're set up the right way. One of the more interesting boats that I've seen of late is the boat from Diablo Paddlesports. They're a cross between a paddleboard and a yak, with standing stability and the ease and tracking of a yak. I probably don't make a lot of sense, so go read about them: Diablo Paddlesports

This isn't a recommendation... but if COST is a concern, this guy sells Creek Company ODC "Classic" one-man pontoons all the time on eBay; and they usually go for about $150:
