Default Catfish caught this morning

After cleaning my catfish this morning, I noticed that the fillet meat was yellow in color through out the meat. I caught it out of Czechland. The last catfish I cleaned (or caught) was about a year ago out of Johnson and I don't recall the meat being yellow.

Is this something to be suspicious of?

Czechland did have higher than normal levels of mercury in the water last year. I don't know if it would discolor the meat?

Was it through all the meat or just on top? If it's just a strip of it then it's fat deposits and can be trimmed out. From what I've been told the yellow fat will have the higher levels of contaminants than the white meat. If it's all of the meat that is yellow I wouldn't risk eating it. Of course, I'm no expert on such things.

when the fish is still floppin around, hang it from something outside and cut its tail off. the cat will flop all the blood out and you will have white meat.

I've always heard to take one of those crappy little plastic swimming pools,fill it with clean water from a tap and let them boys swim round in it overnight. The next morning the water should be dirtier and the fish should have cleaned themselves out a little, leaving you with nice white meat. This is what a few old timers from Arkansas have told me. I've personally never tried it, and the only thing I belive from Arkansas is that they make damn good Moonshine. So, if anyone has or is gonna try this, let me know how it turns out.

I'm always a little leary when the meat doesn't look good. I have never tried the kiddie pool thing. Worth a try.

Livewell is not Latin for latrine.

I've noticed that channel cat fillets have a yellow tint to them while blue cat fillets have a white meat. Maybe your last cat was a blue.
