lightly brush with olive oil and put over a hot grill lightly, don't overcook, just get it hot!!

Cut fillets 1/2 to 3/4 inch thick roll in flour then in beaten eggs then in cracker crumbs. Pan fry or Deep fry until golden brown.

Had our first last night. Just covered with some Mrs. Dash's lemon-pepper mix, shoved in the oven for 20 minutes...man, were they good! If any of you don't want yours, I know where you can get rid of it! I thought they had the consistency of a pork chop if that makes any sense at all!

I caught a Paddlefish a few years ago and cut it into steaks. We baked it and grilled it but it had kind of a "muddy" taste. My wife didn't like it. I bled it and gutted it right away. This years fish was gutted and bled right away and I filleted it when I got home. Frying is going to be the method of choice on this and I assume you guys cut all that red meat off right??

Ty, yep we met Friday. We talked about one of your pups.
Back to the paddlefish, I grilled up some from a large fish by seasoning with lemon pepper and placed a piece of aluminum foil on the top rack while cooking T-bones on the bottom rack. I wouldn't hesitate a minute to do it again. They did smell like the steaks though.

thanks for all of the advice guys. I tried grilling the paddlefish last night. It tasted great but i dried it out a little bit. This evening i got a recipe for fish scampi. Just got finished eating. It was awesome! The texture of the paddlfish is perfect for scampi. If anyone out there likes shrimp scampi you'll love this recipe. If anyone is interested i'll post it later.

That's how I've had it. Scampi, or like crab or lobster. Don't over cook paddle fish or you get the texture of pork chops. Saut'ed in butter until it turns white and slightly firm, then serve with butter for dipping and lemon. It's very good. And a white slightly sweet wine works good if you don't have Corona.
