Default Buffalo fish, any good?

I catch quite a few buffalo when I fish below Red Rock Reservoir Dam in Iowa, in the spring. I have heard they are better eating than carp. Anybody have experience eating buffalo?

My Grandpa, who lived in Southern Minnesota, liked to catch and eat suckers in the springtime. He said they were not as good in the summertime, as the flesh got mushy and muddy tasting. Grandpa use to catch lots of Crappies, but most of what he caught were bullheads, as the local lakes had more bullheads than anything else. My mom said she was raised on bullheads...also lutefisk and lefse, as both my grandparents on my mom's side were Norwegian. She always liked the lefse, but could not stomach the lutefisk. Actually, lutefisk is not bad after several beers and a couple of pulls on something stronger...

My wife is from ND and her family eats this stuff as well. My home area in NE Nebraska buffalo fish dinners are quite common, a lot of the local bars serve fried buffalo and carp. Many prefer the buffalo. I don't mind it though I usually go with the pollock or catfish. It taste a lot better if you are really hungry and had a few cold alcopops though..
