Found a new breading at the store and it is awesome! It is Kikkoman Panko bread crumbs - they are unflavored, but they are coarser than traditional crumbs and have been toasted. The walleye we panfried with these crumbs were super crispy!

I've been looking for a breading that's crispier. Can't wait to pick some up and try it. Thanks

Panko is the old stand by. Sorry you corn flake Ritz cracker crumb guys, Panko is the way to go. I'll give some margin for a flour / corn meal mix.
Dip your fillets in flour. Shake. Dip your fillets in egg wash. Shake. Dip your fillets in Panko (or flour / corn meal). Shake. Then into hot oil ( 350 degree peanut oil of course). Take our when golden brown (or when they float in the oil). Shake, and season. This is how you fry fish. |
