Default Needed: Fish Chowder recipe

Got some bluegill fillets I need to use up, but instead of frying, thought some fish chowder sounded good. Anyone have a good recipe to share?

Give this a try:

INGREDIENTS
  • 4 potatoes, peeled and diced
  • 1 onion, chopped
  • 4 slices bacon, diced
  • 1/4 pound fillets, chopped
  • 1/2 cup milk
  • 1/4 teaspoon freshly ground white pepper
DIRECTIONS
  1. In a large stock pot cover potatoes with enough water so they are fully covered. Bring to boil, then reduce to a simmer.
  2. In a saute pan cook onion and bacon, over medium heat, until onions are soft. Add to potato mixture.
  3. Once potatoes become soft, and the broth has a milky look to it, add cut up fish fillets. Heat until fish fillets are cooked through.
  4. Add enough milk product to bring soup to your desired taste and texture. Season with white pepper and serve.

I use basically the exact same recipe and this one above is good for about 2 people. The nice thing is it isn't hard to double, triple or quadruple the amounts. I also like to cube my fish instead of chop and since I like more fish per spoonful, I use closer to 1/2 pound instead of the 1/4 lb. Oh, and heavy cream works much better than milk!

Fish Soup
  • 1-1/2 pound of fish (walleye, bluegill, crappies)
  • 2-1/2 cups potatoes (diced)
  • 1 cup onions (chopped)
  • 1 cup celery (chopped)
  • 1/2 cup green pepper (chopped)
  • 1/4 cup parsley (chopped)
  • 1 can evaporated milk
  • 1 8-ounce package of cream cheese
  • 1/2 cup carrots (chopped)
  • 1/2-1 teaspoon of Lawry's
  • Salt & pepper to taste
  • Chives (chopped)
  • Shredded cheese
Place fish, potatoes, onions, carrots, celery, green pepper and parsley into kettle and add enough water to cover. Boil until potatoes are tender (15 minutes or so). Lower heat and add milk, cream cheese, salt, pepper and seasoning. Do not boil - just heat and serve. Sprinkle with shredded cheese and chives.


Saw this one day on Babe Winkelman's show, tried it, and it was awesome.

Wow this is making me hungry. I'm glad I found this forum... my wife's not big on fish, but I'm convinced she just hasn't had it done up right.
