Default Baking fish

Anyone recommend any real good rubs or spices for either baking or grilling fish? Tilapia, Bass or Walleye would be the likely suspects that would cross my table.

Give this a try. I downloaded this recipe recently and we tried it last night. WOW, is it ever tasty.

Cheesy Baked Walleye Fillets

4-6 walleye fillets depending on the size

Cheese sauce:
6 0z. Velveeta
1 tablespoon butter
2 -3 tablespoons of milk depending on how thick of sauce you like
1 tablespoon of lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt & pepper to taste

Heat oven at 350. Combine all ingredients for cheese sauce in a sauce pan and cook over medium heat on stove top. Cook until cheese is melted and ingredients are well blended.

Place the fillets in coated baking dish and sprinkle with lemon pepper. Pour cheese sauce over fillets and bake for 20-25 minutes.

Serve with rice side dish and vegetable.

Cheese sauce can be altered depending on if you like more or less flavor or hotter, such as, a dash or more of Tabasco.

Daryl had a great walleye almondine recipe, I cant find my copy but did find it on the old forum...there's a few other recipes as well.

Use equal parts flour and cornmeal and mix lemon-pepper seasoning to taste. Spray a cookie sheet with PAM, then bake at 400 in the oven. Remember to flip the fish just once half way through the baking process.

I like to use two zip lock bags (Qt size) First one flour with salt & pepper. The second with Panko and Parmesan cheese, optional Lemon pepper mix. In a large flat bowl, I whip one egg with mayonnaise and bottled lemon juice. Preheat oven to 425° Prepare cooking sheet covered in aluminum foil coated with spray cooking oil. Rinse fillets and pat dry, place in bag with flour then shake to cover. Then shake off excess then into bowl with egg mixture. Let drip off and place in the Panko bag. Shake and remove and place fillets on prepared foil and bake for about 25 minutes ± depending on thickness until fish flakes with a fork. Optional add more Parmesan cheese on top before baking, to taste. Walleye and BG and Crappie are great. Others may need tartar sauce. Good Eating.

I usually just season with sea salt and ground pepper. Coat the filets before hand in either melted butter or olive oil then season. Bake @ 350 for about 20 minutes or until filets flake easily.

I ate fish about 3 times a week earlier this year baking it at 400 for 10 mins. I didnt use anything for breading and would just spray a small dish with pam and season with lemon pepper.

I seriously love it. Sounds real bland but I was on a hell of a quick weight loss plan and this helped me out immensely.
