First thing you want to do is determine if the bird is young and tender,
or is it old and tough. Grab the top part of the pigeon's bill, try to bend it up towards the top of it's head, if it bends, it is young and tender, if it is too stiff, it is old and tough. the old birds may be pressure cooked and eaten, or treat the farm cats and let them eat well. I breast out the young birds. You can fry these breast whole, or take the meat off the bone. I do things real simple. Get some white flour, add some salt and pepper, then fry in some hot grease. I prefer lard. You can eat them plain, you can dip them in your favorite sauce, you can add spices to the flour. Any way you do it, the mild flavor of these birds is a real treat!!! Good Shootin!! We used to clean them whole like a chicken. Then, make a big pot of Mrs. Grass instant soup. Put the pigeons in the pot and let them simmer until done. Serve them in a big flat soup bowl, and eat the heck out of them. It helped a lot to be able to catch them and just ring their necks so there was no shot to pick out. BB guns used to work well too so we only had to find one BB instead of multiple shot... Ah, the good ole' days...
