Default Eggplant idea's needed please help???

We have eggplant coming out of the garden faster then we can eat it. I like it best fried or baked with parmasain cheese on top. But you can only eat that so often. Doe's anyone else have some recipe's that they can share would be greatly app. Thanks p.m me or share with the rest of us.

look for some eggplant parmesan recipes
its pretty simple just fried eggplant then covered in marinara and cheese and baked

on the bbq grill. butter pepper & lemon seasoning but eggplant parmesian / marinara sauce with m0zzerella cheese melted over the top is my favorite.

Peel, slice, roll in cracker crumbs, fry. Tastes just like mushrooms to me.

I put them on the grill when I make kebabs, same coating....olive oil and whatever spices I put on them.....sliced the long way about 1/4"

Lots of things to do with them
1. Ratatouille - Just like the movie - kind of stewed with zucchini and squash tomatoes garlic onions and herbs - simmer until tender

2. slice length wise as thin as you can - salt eggplant to remove water use eggplant as lasagna layers with a ricotta or cottage cheese mixture with cheese herbs and egg.

3. Shred it on a box grater combine with julienne onions and shredded zuchinni - beat and egg and a touch of water mix with shredded mixture - place small "cakes" on griddle - cook until GFB (Golden F'n Brown) tops with basil crema (basil sour cream)

4. Easy - slice in to quarters - olive oil -salt & pepper - oven at 350 -400 cook until tender and eat!

This is kind of a late post but one way I like egg plant is to prepare it much like one would salmon pattys. Peel the egg plant then grate it, mix in some crushed crackers onion and egg. Make pattys out of the mixture and then fry them on med low heat in olive oil until golden brown.
