Default German Sour Kraut

Here is an old family recipe that I have done little to change. This recipe has turned countless kraut haters into kraut lovers.

32 oz by volume Sour Kraut
2 Apples
2 Eggs
4 Tbl Brown Sugar
1/4 Cup Butter
1 Med onion, chopped
2-4 cloves garlic, smashed
1 Tbl Whole Caraway Seeds
Salt and Pepper to taste

First off rinse the kraut until its strong scent subsides (2-3 times) allow to drain.

In a large skillet melt the butter then add in the onions and garlic.Add a pinch of salt and saute them until they are translucent.

Add in the caraway seeds and apples, cook until they apples become tender.

Add in sour kraut and heat throughout, then remove the skillet from the heat and add the two eggs (beaten), add pepper to taste and mix thoroughly.

Serve with a nice dark beer

Sounds like a great recipe. May try some while camping at Johnson Lake this weekend.

That sounds really good. When I had kraut in Germany they added bacon. My wife would never touch the stuff but she loved it there and in the Czech Rep.

Frosh is right, I left out the hog. 2 to 3 strips would work just fine

Default german kraut

Jarred, your recipe sounds great!

If you haven't already, you should try the imported German sauerkraut available at some grocery stores (often, those that specialize a bit in gourmet stuff, like Ideal and Leons in lincoln). Its' got a much "cleaner" taste than the canned "Frank's" domestic kraut. Might save the rinsing.

I once had Alsatian sauerkraut with pigs's knuckle, sausage and a half of a braised hen pheasant in a restaurant in France. (The hen had #8 shot in her) The kraut is cooked with white wine and lightly flavored with juniper berries. Served with potatoes and carrots. Good stuff.

You convinced me! My wife was actually out Grocery shopping and I had her add the missing ingredients to her list! I can't wait! it sounds delicious! I'm also having her pick up some Brats to go with! I think I'll top it off by enjoying a good Hefe!

I think we are going to do this Sunday night which is perfect cause I need to induce some revenge on a couple of guys at work!
