What oil is best for frying fish? I've heard peanut oil is good but I've never tried it. I usually use vegetable oil.
What do you use?

though it's more expensive, nothing but peanut oil anymore.

I'm pretty sure that the butter defies the "healthy" part
, you would be better off with all canola or peanut oil. Adding other oils to the olive oil raises the smoke temp but doesnt provide much in the way of health benefits over just peanut oil. Peanut oil contains the Omega 3 and 6 fatty acids that olive oil does but in a slightly smaller quantity (actually canola has more omega 3's than olive oil). Just an FYI, there is a lot of conflicting info out there about what oils are better than others (health wise).

coconut oil is great for a change, but not all the time (and 'healthy' and 'natural')
