Clean catfish, ie; trim away the yellow strip at the top of the fillet, and scrape off most of the brown stuff on the skinned side. Wash and drain fillets well. Rip off generous squares of aluminum foil 1/3 longer than fillet. Meanwhile, heat up the grill medium hot. Shake a bit of salt and pepper, and a dash of dill on foil and lay fillet on this. Coat fish with lemon juice, first, then add dried dill, and salt and pepper. The amount of juice and dill or spices depends upon the size of the fillet. Don't over do it. A tbsp of beer is optional (drink rest of beer, or two.)

If you want a spicier taste, sprinkle well with your favorite seasoning. Fold the edges of foil tightly to create a leak-proof pouch, and place pouches of fish on grill. Allow fish to steam and saute' in it's own juices.
This is a tasty and healthier way to enjoy any fish. Serve with cornbread, salad, and veg.
