Here is an easy one that aims to please.
1/2 Cup Panko Breadcrumbs 1/2 Cup AP Flour 1/2 Cup Grated Parmesan 2 to 6 Tbls Ground Serrano Peppers 2 Eggs Well Beaten Salt to taste 1 lb Catfish Cubed into 1" Cubes 1. Beat the eggs and set aside 2. Mix all dry ingredients 3. Salt catfish Cubes Liberally 4. Dip all Cubes into Egg Wash 5. Dredge the Cubes in Batter mix 6. Fry fish in 160 Degree oil until golden brown. Let me know what you think! ![]()
