I use oven bags when cooking Wild turkey. Just season like you would a normal Thanksgivin Turkey. Put in some onions and carrot and a bit of celery. You cannot beat it.
Don't for get the garlic.

A real simple way of cooking it..

Soak them in a little brin and than wrap in bacon and put on the grill. Cut a few jalepenos to add to them. We had that for our poker game last week and they were gone in about 10 minutes.

Cut in strips 1/4 - 1/3 inch thick, and season them just like fish for deep frying. One of the better ones Ive had is by dipping in eggs and then covering with shorelunch's cajun power mix.

Brine it overnight in a mix of Brown sugar and salt. Then smoke it or cook it in the oven at 180-200 degrees.
