Default Smoked trout dip/spread?

Does anyone have a recipe for a smoked trout spread similar to the one at Charleston's? I've never had theirs, but I'm told it's pretty good. (Most of my "eating out" experiences lately have been preceded with the phrase, "Ya want fries with that? )

Default salmon Pate

I don't know what Charleston's have, but this is a good one and don't see why you couldn't use trout instead of salmon.
15 oz. smoked salmon
8 oz. cream cheese
1 tbsp lemon juice
3 to 4 tbsp horseradish
1 grated onion
1/4 tsp salt
mix togather in food prosses

Dad O., the person who told me about Charleston's wasn't sure if it was a cream cheese base or mayo base. Big difference! I'm going to try your recipe. The horseradish sold me!

I had never heard of Charleston's till you mentioned it, but since then they started advertising one in Phoenix. I really like the kind with the horseradish.

Just made up a batch, Dad O., and it tastes GREAT, even before letting the flavors blend overnight. Thanks again for the recipe! (The only thing I'll add is a few chopped chives on top, just to give it some color.)

A friend made one similar, minus the horseradish; and used chopped green onion rather than grated. The horsie does sound good...

We served the spread to company yesterday as hors d'oeuvres, and although neither consider themselves "fish eaters," the spread got rave reviews! This is a great recipe for either smoked trout or salmon, one I'll make again and again.

Trout 1/2 pound.
  • 1/4 cup Mayo.
  • 1/4 cup sour cream
  • 1 tsp. dill weed
  • 1 tbsp. lemon juice
  • Fresh cracked black pepper
  • Dash of Worcestershire sauce
  • Dash of tobasco
  • 1/2 tsp. cayenne
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
Mix well and chill. Serve on pumpernickel toast points, garnish with lemon capers.
