Default Fish Cakes

Basically like crab cakes but using fish and a bit of my own spin.

1 lb Fish, skinned
2Tbl Fresh Ginger, pressed
4 Cloves Garlic, pressed
1 med onion, quartered
1 tsp dry dill
salt and pepper to taste
2 Tbl lemon zest
1/2 tsp Dry mint
1 C panko breadcrumbs
1 rib celery
1 carrot, peeled
1/2 Large Green pepper, seeded
1 egg
2 Tbl Butter

1. Very simple take all ingredients(except butter) and combine in food processor and puree using 2-3 second pulses. Use salt liberally (probably 2-3 tbl worth)
2. In a skillet melt the butter and pre-heat the oven to 350 degrees
3. Brown the cakes in the butter, then move them to the oven that is pre-heated and bake for 20-35 Minutes until cakes set up and are firm but cut easily with a fork.
4. Serve and impress anyone who claims that they dont like fish.

Any particular kind of fish work better than another?

I use salmon, but whitfishes will work equally as well
