After one trip this summer I was talking to an older guy and he had a good sized northern that he just filleted, didn't bother taking out the Y bones at all. He just ended up with two slabs of meat. He said he had a way of baking them where the fillets just peeled away from the bones. Any suggestions on specifics? I've never baked northern at all so I'm pretty uninformed. Thanks!
