Well, I've seen kits where, after you let the oil cool, you can pump back and filter it and save it for next time.

Depending on the type of oil and if it's reached the smoking point and has deteriorated (which means bad tasting/smelling food the next time), you can reuse it. Another thing to consider is what you cooked with it in. Some metals are bad for frying (even if they were made for frying). I wouldn't reuse oil that was used in something like a castiron skillet or even cheaper pots.

Mako
Was wandering why you wouldn't reuse it if it was in a cast iron skillet?

Because a lot of metals, especially iron, promotes the rancidity of oils. Which brings up another thing...make sure you tighten the caps as oxygen does the same thing.

The oil is to the point of no return... i used it multiple times this year... i have a filter kit that i use when i am done frying, but i have used it so much that the oil is starting to break down.

I just need to find a place to dispose of it... does anyone know of any place that will take fryer oil.

I wonder if one of the Auto parts places would take it? Like in the motor oil recyle bin? They dump everything in there, old tranny fluid and stuff. What cold a little fryer oil hurt ?

Some people will recycle it (my parents' restaurant recycles), but most people put it in a container like a gallon bottle of milk, or the container it came in, and throw it out.

How do you tell when it has reached the smoking point?

Easiest way is if you saw it smoke the last time you used it. You can also smell the oil and see if it smells burnt at all, and if it's also pretty dark, you've probably gotten the last good use out of it. Also, if you see a lot of foam when you heat it up (or even before heating), it's probably bad as well.

That's why my french fries at home taste so bad. I'm using dark, burnt smelling, foamy oil. Maybe I shouldn't reuse it 35 times.

anyone know if soybean oil would work?

We get about 6000 gallons a week at work and of course have a couple gallons here and there that could be missing.

Never used soy oil to totally fry with, but, I've used it just to stir fry.
