Default Good Beef Jerky?

Anyone know any good places to purchase beef jerky? I'm not talking about the crud that is packaged at the grocery store, but good old fashioned beef jerkey from a meat locker.

I used to go to Bellevue and get my jerky at Avery Meats, but they disappeared without a trace.

I used to buy a ton of it from a little shop in Bayard, then he got busted by the COs for selling poached deer...

And a lot cheaper too. I know a few up north from backhome that are really good. But nothing down here.

Mmmmm, best way to fix meat is poached. You just have to get the steaming time right.

Rick's has jerky? I've been in there a few times and never seen it. Guess I wasn't looking.

Ravenna Meat locker used to be the best around. Its not as good as the previous owners but still pretty good stuff.

You might give B.I.G. meats in Millard a try. I've had my deer made into summer sausage and deer sticks. Regular and hot. Pretty sure he has beef jerky.

Getting some started right now...

I use top round roast, but you can use just about anything, just remove as much fat as possible... or eat the peices with the fat first... I'm told they're delicious. Generally around 3-5 lbs of meat, as that's what my dehydrator holds.

1 bottle of soy sauce
1 3oz bottle of hot sauce... I like the louisana brand habenero, but that might be a bit much for a lot of people.
about a tablespoon of coursely ground black pepper
about 3 large tablespoons of minced garlic
1/4 cup of brown sugar
1 tsp of mollasses (black strap)
2 tbs honey
bit of liquid smoke, I use maybe 1/4 -1/2 tsp.

dehydrate for 6-8 hours, let it cool and bag it. I can't find anything that compares in a store.
