![]() Was doing that over the weekend for an church party, took 12 hrs to cook and 3 hrs to sit to cool down, cooked at 250 to 225 over night, yeah stayed up watching it. had chicken inside the hog with Oinos.. was still real hot inside after 3 hrs. every thing was well cooked and fall off bones.. need to do that again!! it was good.. steve ![]()

Did the same thing with a church group a month or so ago. It was a wonderful experience.
Nothing can compete with that first handful of meat that falls off the bone and into your hand as you are taking it off of the spit and unwrapping it. The 7th or 8th handful of loose meat is very good also.....Needless to say it does not taste quite as good a couple of hours later when the folks show up for dinner and you as the "guardian of the pig" have already a belly full YUM ![]()

My family used to bury a pig in a pit on the 4th. Yumm!
