As baking is supposed to be better for you, here's one I use to bake fish.
I like to use two zip lock bags (Qt size) First one flour with salt & pepper. The second with Panko and Parmesan cheese, optional Lemon pepper mix. In a large flat bowl, I whip one egg with mayonnaise and bottled lemon juice. Preheat oven to 425° Prepare cooking sheet covered in aluminum foil coated with spray cooking oil. Rinse fillets and pat dry, place in bag with flour then shake to cover. Then shake off excess then into bowl with egg mixture. Let drip off and place in the Panko bag. Shake and remove and place fillets on prepared foil and bake for about 25 minutes ± depending on thickness until fish flakes with a fork. Optional add more Parmesan cheese on top before baking, to taste. Easy, no flipping in hot oil. No droping in hot oil. All cooked at once. Walleye and BG and Crappie are great. Others may need tartar sauce. Good Eating.
